In answer to your question, as a company CCTV Wholesalers does several hotels a year, speaking personally this would be I think the fifth or sixth system I've designed for a large-scale hotel operation, so we're very experienced in your field. You seem to be covering all of the bases we normally like to see covered, so I'd say you're pretty much on the right track.
That said, the system you see here covers all of your bases and doesn't make any compromises at all. All of your POS locations are covered with high-resolution, professional-grade cameras designed to get clear facial detail even in very poor lighting conditions, and I also used those same style of camera in most other locations as well to keep the system as uniform (and easy for you to maintain) as possible. The exception to this is the camera in the elevator, where I opted for a much smaller and less conspicuous model, however you are going to need to get a specialist who works with elevators to wire that camera up for you (as cabling in elevator shafts typically have special requirements).
Similarly, the DVR (which records your video) on this quote comes from our PC Witness Pro series and is designed for high-intensity work and processing, meaning it will easily be able to accommodate the workload you'll be giving it. The system should save about 30 days worth of video, and also has the ability to send you email, text message or phone call alerts when certain things happen (for instance, in the case of a break in, the DVR can call your cell phone and let you know something is going on). After that everything is standard, including your power supply, the POS capture boxes themselves, and plenum-grade cable (with superior shielding that's typically needed for large buildings like hotels).
