As with anything else, it's really a tool for the job question, and it depends upon what each individual camera will be doing in your club (for instance, we would use different cameras to watch registers than we would use to watch a dance floor). It also depends upon what kind of lighting you have and how detailed a picture you are interested in getting (for example, did you need to see the face of each individual person on a dance floor, or would it be sufficient to just see how many people were there?).
In general, most bars or clubs are fine using IR cameras running at 420TVL, however I emphasize that they are only what's generally used and are not necessarily right for each application. Some models you might be interested in:
